Reverts the .NET 8 version back to version 6, as it currently has some issues (MacOS version is completely unusable) and is not absolutely necessary. This also keeps support for some older OSes, like macOS 10.14. Other updated dependencies should not be affected.
If a .NET 8 upgrade happens in the future, we need to check what dependencies still need to be upgraded to be compatible with .NET 8 and do some proper debugging for issues.
